This one is so scrumptious with chicken, fruit, nuts and pasta.  This salad is full of nature’s bounty and will make you super strong just like Popeye when he eats his spinach.

Popeye's Spinach and Strawberry Pasta Salad

So sweet and yummy and perfect for growing minds.  Super easy to pack in school lunches.


  • 8 oz Penne Pasta (Regular or Gluten Free) can replace with Quinoa if preferred
  • 1 Cup Chicken breasts, Cooked Rotisserie or Organic Canned
  • 2 Cups Organic Baby Spinach
  • 1 Cup Organic Strawberries, sliced
  • 1 Cup Organic Pineapple chunks
  • 1/4 Cup Organic dried Cranberries or blueberries
  • 1/2 Cup Organic salted cashews, or peanuts, or walnuts

Orange Poppy Seed Dressing

  • 1/2 Cup Organic Extra-Virgin Olive Oil
  • 1/3 Cup Organic Apple Cider Vinegar
  • 1/4 Cup Organic Plain Greek Yogurt
  • 1 Tbsp Organic Dijon Mustard
  • 3 Tbsp Organic Honey
  • 1/3 Cup Organic Orange juice
  • 2 tsp Organic Poppy Seeds


  1. Mix all the dressing ingredients in a mixing bowl and whisk together or add to a jar and shake to mix.

  2. Combine Salad ingredients in a large salad bowl and toss with prepared dressing.

  3. Serve immediately or chill for 1 hour and serve chilled.
