Tie Your Shoes Chicken, Grape and Bow Tie Pasta Salad

This salad is loaded with goodness.   Full of protein with chicken and almonds and has fresh grapes to create a sweetness that kids will love.

If you prefer a low-carb option, just replace or reduce the pasta and add fresh organic baby spinach or a spring mix.

This salad is versatile and full of yummy ingredients every super hero will love.

  • 10 oz Bow tie pasta (regular or gluten free) (Cooked and cooled)
  • 2 Cups Cooked and cooled chicken (I use rotisserie or organic canned chicken)
  • 1 1/2 Cups Organic red grapes
  • 1 Cup Diced organic celery
  • 1 Cup Sliced almonds (I use Fisher Sliced from a bag)
  • 1/2 Cup Dried organic cranberries (bagged)

  • 1/2 Cup Plain Greek Yogurt
  • 1/2 Cup Organic mayo
  • 3 Tbsp Organic Apple Cider Vinegar
  • 3 Tbsp Organic honey
  • 2 Tbsp Organic sugar
  • 1/2 Tbsp Poppy seeds
  • 1/2 tsp salt (to taste)
  1. For the Dressing – mix all dressing ingredients in a mixing bowl and set aside

  2. Add drained and cooled pasta to large salad bowl.

  3. Add in chicken, grapes, celery, almonds, green onions and cranberries

  4. Pour dressing over the top and toss evenly to coat.

  5. Season with more salt if necessary according to your taste.

  6. Chill for at least 30 minutes up to 1 day so pasta can absorb the flavor of the dressing and the other flavors to meld together.

  7. Add portions to individual serving bowls and place in the fridge on Sunday to pack and go in the mornings before school.
